Roasted Tomatoes with Pesto
These will brighten up any dish. Few ingredients; full of flavour. A healthy side dish, that can be served alongside fish, meat or anything you fancy.
6 large ripe tomatoes
50g fresh basil
25g toasted pine nuts
2 garlic cloves
100ml Extra Virgin SkapEti olive oil
25g freshly grated parmesan
Heat the oven to 190 /Fan 170/ gas 5. Halve the tomatoes and arrange them in a roasting tin, cut side up, one single layer.
Making the pesto. put the basil, pine nuts and garlic in a food processor, and whizz to a paste. At the same time, drizzle in the olive oil. Transfer to a bowl and stir in the parmesan. Season to taste.
Spoon roughly 2 tsp of pesto over each tomato, then roast for 20 mins, until the tomatoes are tender.
Too easy. So delicious.
